Video: Creating a chocolate bomb

Watch as the chefs in the Royal Kitchen create a Bombe Glacée Sultane, which is a chocolate ice cream created using traditional copper moulds.

The moulds are filled using an adapted chocolate cream which is frozen before being partially scooped out and a second flavour added to the centre. In this case the second flavour was praline.

Once turned out the bombes are garnished with rows of specially cast chocolate buttons replicating those worn on the footman’s uniform.
